Nibble Tip
Think of making your salad course more of an event. Instead of a simple dressed salad, look for a special extra to add to it each day. Perhaps strips of beef or chicken from a prior day’s roast; marinated grilled vegetables; a slice of fresh goat cheese or duck prosciutto, bean sprouts and daikon marinated in a sesame vinaigrette. You don’t need to look far for inspiration: it’s probably already in your refrigerator and cabinets.
