Green Tea Ice Cream Recipe

Love Green Tea Ice Cream? Can’t Find It? Make It Yourself!

 

Many people look forward to a bowl of green tea ice cream, and would like to enjoy it more often, at home. Unless you live near an Asian market, it’s hard to find the flavor, although Reed’s Green Tea Ginger Ice Cream and Ciao Bella Green Tea & White Chocolate Chunks Gelato—two of our favorites—can be found at many Whole Foods Markets and specialty foods stores.

But why travel when there’s an easy recipe to whip up at home? This recipe is courtesy of Riingo restaurant in New York City, where Chef Jimmy serves it with miniature green tea donuts. All you need is matcha, powdered green tea—which you can also use to whisk up a delicious cup of hot tea (see below).

Ingredients

  • 1.5 quarts whole milk
  • 1 pint heavy cream
  • 16 egg yolks
  • 20 ounces sugar
  • ½ cup matcha green tea powder
    (photo at right)

Directions

  1. Bring milk and half of the sugar to
    scalding (right before boiling).
  2. Whisk the yolks and the rest of the
    sugar together in a bowl.
  3. Temper together and then add the
    matcha powder.
  4. Pour mixture into ice cream
    machine and follow the
    manufacturer’s instructions.
Matcha Powdered Green Tea
Matcha (powdered green tea) is made from shade-grown sencha leaves. Purchase matcha here.

Matcha, which literally means “powdered tea,” is a flour-fine, chlorophyll-green tea powder made from the finest, young leaves from spring’s first tea harvest. It is the tea used in the famed Japanese tea ceremony, where it is whipped into a froth in a ceramic bowl with a bamboo whisk. At home, you can use a small metal whisk: Simply measure a heaping teaspoon into a small ceramic bowl and add four to six ounces of water. Whisk briskly until any small lumps are gone and the tea is frothy. Drink it immediately from the bowl, before the sediment settles. You can make the tea thicker or thinner, according to your preference.

Matcha Tea SetOr, treat yourself to a Matcha Tea Kit with all the essential tools you need to make matcha at home including 20g of matcha powdered green tea (10 to 15 servings), a bamboo whisk, bamboo tea scoop and sifter. You’ll need to supply your own lovely drinking bowl.
