Recipes For The Hottest New Cocktails


If you were at the Hôtel Byblos Saint-Tropez on the French Riviera, you could join international jet setters and celebrities in the latest new cocktail recipes developed by The Byblos Bar’s team of master mixologists. They have deconstructed the classic cocktail, enabling guests to enjoy drinks with a modern twist. 

You can serve these cocktails to your own guests—to acclaim and perhaps, even, applause. All you need are oversized martini glasses and tall shot glasses (we’ve included some choices below).

  • Guests can drink the shots with a chaser from the martini glass, or choose to mix their shooters into the glass.
  • At brunch, you can keep a pitcher of the “shooter” on the table, so people can keep refilling their “juice” as they sip at the heavier alcohol in the martini glass.

If you do get to Saint-Tropez, and have time to stop by the Hôtel Byblos for more than cocktails, snag a reservation at Spoon Byblos, Alain Ducasse’s haute cuisine concept dining restaurant. The Bloody Mary


Deconstruct a Bloody Mary by pouring vodka over crushed ice.

Add a shooter of lightly spiced fresh cherry tomato purée or your favorite tomato juice, and a lemon slice.

The Byblos


The Byblos (photo at top left) is a glass of ripe raspberries, marinated in Grand Marnier with a shooter of icy gin and lemon peel.  Serve with a spoon! (Byblos, in modern Lebanon, is the oldest port in the world—more than 5,000 years old.)

Pina Colada

The Piña Colada


Pour light rum over crushed ice with a shooter filled with fresh purée of pineapple and coconut sorbet.

The photo shows a pineapple head garnish, but we’d prefer a succulent pineapple spear.

The Kir Royale


Deconstruct a Kir Royale by pouring a half ounce of framboise (raspberry liqueur) over crushed ice and filling the rest of the glass with Champagne or other sparkling wine.

Include a shooter of freshly-puréed raspberries and mint.

The Mimosa, The Bellini


Along the same lines, you can deconstruct a Mimosa or Bellini by pouring Asti Spumante, Champagne or other sparkling wine over crushed ice. 

Serve with a shooter of freshly-squeezed orange juice (Mimosa) or peach nectar (Bellini).
