Recipes: Greek Turkey Burgers With Spiced Yogurt Sauce And Broccoli & Potato Frittata

 

Oregano is one of the Seven Super Spices, which all have high levels of antioxidants. At 3,602 ORAC, it has the second highest antioxidant level of the group. This herb is very easy to implement into your regular diet. You can add it to any number of savory dishes: Try it in grilled cheese, pizza, tomato sauce, grilled vegetables, meatballs and poultry, just to name a few. Broccoli & Potato Frittata

With a triple hit of antioxidants from oregano, rosemary and thyme, this hearty and healthy frittata makes a welcome weekend breakfast or busy weeknight supper. Leave the potatoes unpeeled to reap the benefits of the vitamins and fiber contained in the skins.

Serves 6.

Ingredients

  • 1-1/2 cups cubed potatoes
  • 2 cups broccoli florets, coarsely chopped
  • 1 tablespoon olive oil
  • 1/2 cup onion, coarsely chopped
  • 1 teaspoon oregano Leaves
  • 1 teaspoon rosemary leaves, finely crushed
  • 1 teaspoon thyme leaves
  • 3/4 teaspoon Sea Salt, finely ground
  • 1/4 teaspoon ground black pepper
  • 6 eggs
  • 1/4 cup milk
  • 3 medium plum tomatoes, thinly sliced
  • 1/4 cup grated Asiago cheese
Broccoli Frittata

Preparation

  1. Bring water to boil in medium saucepan. Add potatoes; cook 7 minutes or just until tender. Add broccoli; cook 1 minute longer. Drain well. Set aside.
  2. Heat oil in large ovenproof nonstick skillet on medium heat. Add onion; cook and stir 5 minutes or until softened. Stir in potatoes and broccoli. Reduce heat to medium-low.
  3. Mix oregano, rosemary, thyme, 1/2 teaspoon of the sea salt and pepper in medium bowl. Add eggs and milk; beat with wire whisk until well blended. Pour mixture into skillet. Cook without stirring 5 minutes or until eggs are just set on bottom.
  4. Arrange sliced tomatoes on top of egg mixture. Sprinkle with cheese and remaining 1/4 teaspoon sea salt. Broil 4-5 minutes until eggs are set and cheese is lightly browned.

 

Greek Turkey Burgers With Spiced Yogurt Sauce

Enjoy the bold Greek flavors in these easy and healthful turkey burgers. The yogurt topping is delicious with grilled fish, too.

Serves 4.

Ingredients

Turkey Burger

  • 1 pound ground turkey
  • 1/2 cup reduced fat feta cheese
  • 2 teaspoons oregano leaves
  • 1/2 teaspoon thyme leaves
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons olive oil
  • 4 whole wheat hamburger rolls
  • Red leaf lettuce, tomato and cucumber slices for burger garnish (optional)

OreganoSpice up your usual pizza with a teaspoon of oregano and get at least 3,602 ORAC for every slice you eat.

Spiced Yogurt Sauce

  • 1/4 cup plain lowfat yogurt
  • Ground black pepper
  • Ground cumin
  • Sea salt, finely ground

Preparation

  1. Mix ground turkey, feta, oregano, thyme and 1/2 teaspoon pepper in large bowl.  Shape into 4 patties.
  2. Heat oil in large nonstick skillet on medium heat until hot.  Add patties; cook 4-5 minutes on each side or until burgers are cooked through (internal temperature of 160°F).
  3. Season yogurt to taste with pepper, cumin and sea salt.  Serve burgers on toasted rolls.
  4. Top each burger with 1 tablespoon of the yogurt mixture.  Garnish with desired toppings.
