Gourmet Rice Pudding

 

In a world of specialists, Rice to Riches may have the world’s only Rice Pudding Chefs, headed by Jemal Edwards. A former pastry chef at the prestigious New York restaurants Montrachet and Nobu where he crafted ice creams, sorbets, pastries, and other confections, he now turns out dozens of different flavors of rice pudding—just rice pudding—each week.

Located in New York City’s trendy NoLita neighborhood, just east of SoHo, the rice pudding flavors are equally trendy.

This is an entirely different flavor selection, we hasten to add, from the last time we were there.  As you can see, you get comforted in high style.  And if you think it can’t possibly taste good, everything we’ve had has been delicious. Our one complaint is that the chefs constantly invent new flavors, you can’t count on the one you swooned over to reappear again.

The rice pudding is made daily in small batches in the shop’s specialized, high-tech, elaborate kitchen, which was designed to produce nothing but rice pudding. Rice, milk, sugar, eggs, cream, and a varying parade of natural seasonal flavors and fruits produce rice pudding probably unlike any you’ve had before. You can tell just by looking at it that it’s special: creamier, thicker, and certainly, chock full of things you’ve never seen in rice pudding before.

The texture is incredible (it’s made with firm-grained sushi rice). What may sound weird in concept comes together beautifully, because the flavorings are the best that money can buy, and because these are complex recipes developed after long trial and error by gifted pastry chefs. It’s not a so simple as stirring in cocoa and dried cherries to create chocolate cherry rice pudding. Believe us, if we could make rice pudding anywhere near this good at home, we would. These recipes only could have been developed by gourmet a rice pudding experts who have perfected the the technique over time.
