Fiddler’s Green Farm Pancake and Baking Mixes

  • Captain Dave’s Pancake Mix. Grain mix: organic whole wheat pastry flour, organic corn flour, organic buckwheat flour. I used the optional egg. When prepared according to package directions, the batter was so thin I had to add more mix to it. The batter is attractive, with specks of grain, an excellent rise and delicate browning. You’ll know these aren’t white flour pancakes, but the grain flavor isn’t too heavy-handed, either. They’re rather flat if eaten plain but very good with maple syrup.
  • Oats ’n Barley Pancake Mix. Grain mix: organically grown barley and oats. When prepared according to package directions (which include the addition of 1/4 teaspoon salt), the batter was so thin I had to add more mix. There was excellent rise and good browning. The finished pancakes were fluffy with a mild taste, but too salty.
  • Organic Fiddle Cakes. Grain mix: organic corn, organic oats, organic barley, organic brown rice. Curiosity: This was the only mix I found that uses either apple juice or orange juice as the liquid. I used orange juice (and the optional egg). Directions call for “Heaping cup of mix”; I’d like a more precise measurement. When prepared according to package directions, the batter was so thin I had to add much more mix. The batter was a beautiful golden color from the corn and orange juice, with attractive speckles of grain. A good rise and fine browning. The finished pancakes were somewhat fluffy with a cornmeal texture, but the flavor, which tasted like burnt orange juice, was awful. Even syrup couldn’t correct this.  FiddlersGreenFarm.com

Green Mountain Sugar House Old Fashion Buckwheat Pancake Mix

Grain mix: wheat flour, buckwheat flour, rye flour. I used the optional egg. When prepared according to package directions, the batter was of a near-perfect consistency, with excellent rise and delicate browning. The finished pancakes were fluffy and not gummy, with a mild grain flavor—but too salty.  GMSH.com

 

Gaukel Grown & Ground Whole Wheat Pancake Mix

Grain mix: stone ground whole wheat flour, white flour. When prepared according to package directions, batter was on the thin side, but not bad. Excellent rise, good browning. Finished pancakes were fluffy, with a cornmeal-like texture and slightly sweet flavor. These pancakes were not strong-tasting and might be a good introduction to multi-grain foods for kids.
