A World Of Ingredients For Hamburger Happiness

 

CAPSULE REPORT: We were inspired by our own review of Built Burger, a NIBBLE Top Pick Of The Week, to develop burger recipe options so that one might have a different deluxe burger every day of the month. Burger Recipe Tips

  • In addition to salt and pepper, you can season the ground beef with special spices before making the patties. For example, in the Italian burger, consider adding oregano.
  • A good basic burger seasoning: To 1-¼ pounds lean ground beef, add 1-¼ cup finely-chopped chopped onion, 3 tablespoons ketchup or barbecue sauce, 1 tablespoon prepared horseradish and 2 teaspoons prepared mustard (your favorite), plus salt and pepper to taste.
  • For a leaner, healthier burger, look for grass-fed beef. You can substitute the leaner bison for beef. Remember that because bison has so little fat, it must be cooked no more than medium-rare or else it dries out.

Apple Burger Sautéed apples, maple bacon, Cheddar cheese
Bagel Burger “Wellington” Chopped liver, lettuce and tomato on a garlic bagel

Chili-Cheese Burger Chili, hot sauce and shredded Jack or Cheddar cheese on a bun; can substitute turkey, lamb or veggie burger
Classic Burger Lettuce, tomato†, raw onion, pickle slices and ketchup, with fries; season beef with garlic or onion powder
Cranburger Bacon, spicy cranberry sauce, baby arugula, tomato and aïoli (garlic mayonnaise) on a sesame seed bun; can substitute turkey or veggie burger
Diet Burger Lean beef, bison, turkey or veggie burger wrapped in lettuce leaves (no bun), garnished with Israeli salad (diced tomato, bell pepper and onion with fresh parsley and vinaigrette)
Dutch Burger Flavored Gouda cheese (Beemster makes numerous flavors, including mustard seed and wasabi) and cole slaw (which comes from Dutch, kool sla), lettuce and tomato on a whole grain, seeded; can substitute turkey or veggie burger roll
French Burger I: Traditional Caramelized onions, Brie or Camembert cheese and aïoli (garlic mayonnaise) on a toasted brioche roll; can substitute turkey or lamb burger
French Burger II: Casual Keep the burger patty under 1/2-inch thick and up to six inches in diameter; top with grated Gruyère cheese, diced raw onions, diced tomatoes, shredded lettuce, a fried egg, ketchup and mayonnaise on a boule
Goat Burger Fresh goat cheese, roasted red peppers, fresh basil leaves; can substitute lamb, turkey or veggie burger
Hawaiian Burger Pineapple, Cheddar cheese, bacon, lettuce; can substitute turkey burger
Hickory Burger Hickory-smoked bacon, hickory-smoked Cheddar or Jack, sautéed sliced apples and lettuce; can substitute turkey burger

Mexican Burger II: Salsa Tomato salsa, sliced green chiles, avocado, chipotle mayonnaise; can substitute turkey or veggie burger (serve with a side of tortilla chips)
Mexican Burger III: Jalapeño Guacamole, Jack cheese, pickled jalapeños; can substitute turkey or veggie burger; can substitute turkey or veggie burger(serve with a side of tortilla chips)
Mexican Burger IV: Refried Beans Refried beans, shredded Cheddar cheese, sliced jalapeños; can substitute turkey or veggie burger (serve with a side of tortilla chips)
Mixed Grill Burger Bacon, pepperoni, sliced bratwurst, roasted pork and optional cheese (great use of leftovers)
Mushroom Burger Sautéed wild mushrooms and sauteed onions; can substitute turkey or veggie burger
Pita Burger Feta cheese, yogurt and dill sauce in a pita; can substitute lamb, turkey or veggie burger (see also Lamb Burger)
Pizza Burger I: Margarita Tomato sauce, mozzarella cheese, fresh basil and Parmesan cheese; can substitute turkey burger
Pizza Burger II: Pepperoni Pepperoni, tomato sauce, mozzarella on a crusty roll or pita (most like a pizza crust)
Protein Burger Fried egg, ketchup, optional bacon; can substitute turkey burger or veggie burger
Reuben Burger Corned beef, sauerkraut, melted Swiss cheese, thousand island dressing on grilled dark rye or pumpernickel bread

*Devised by Chef Daniel Boulud at DB Bistro Moderne in New York City. Chef Boulud mixes truffles in with the beef and tops the burger with 20 grams of shaved black truffles.

†When tomatoes are out of season, substitute roasted red pepper or sundried tomatoes in seasoned olive oil.

‡A Holsteiner Schnitzel is a breaded veal cutlet topped with a fried egg, anchovies and capers.
