Krusteaz Complete Pancake Mixes

  • Wheat & Honey Pancake Mix. Grain mix: whole wheat flour, enriched bleached flour, soy flour, wheat bran. This is a JAW mix (just add water). When prepared according to package directions, the batter was so thin I had to add more mix to it. There was excellent rise and delicate browning. The finished pancakes were indeed light and fluffy, with a little texture. There was not much flavor initially, and a somewhat bitter aftertaste.
  • Low Fat Oat Bran Pancake Mix. Grain mix: enriched bleached flour, oat bran. This is a JAW mix. The mix has a slight spice aroma. Curiosity: the mix contains dried apples. Package states “Batter will be thin at first and thicken upon standing. Batter is best used between 5 and 30 minutes of preparation.” When prepared according to package directions (including a 5-minute standing time), batter was much too thin. After an additional 5 minutes, it was still too thin; I gave up and added more mix. Very high rise, good browning. Finished pancakes had a pleasant spice aroma, were very fluffy, with a slight taste of apples and spices.

Cappuccino Cream Topping For Pancakes

This sauce takes the place of maple syrup or other condiment. Recipe courtesy Krusteaz.

  • Ingredients: 2 tablespoons instant coffee, 1 tablespoon hot water, 14 ounces (1 can) sweetened condensed milk. Optional whipped cream and chocolate shavings for garnish.
  • Preparation: In small bowl, stir together the instant coffee and hot water until the coffee is dissolved. Stir in the sweetened condensed milk. Heat in microwave on HIGH for 45 seconds. Serve warm over hot pancakes with whipped cream and chocolate shavings.

Life’s Little Pleasures Maple & Oat Pancake Mix

Grain mix: oats, unbleached flour. Oats are visible in mix. The instructions give a range of liquid; when prepared with a quantity of milk within the range, the batter was of great consistency, with excellent rise and very good browning. The finished pancakes are fluffy, not gummy, with some texture from the oats. These are good by themselves and very good with maple syrup, but they’re just a bit too salty. Littleton Grist Mill Pancake Mixes

All mixes from this company are certified USDA Organic. In preparing the batters, I used an egg for all four varieties (as opposed to the yogurt substitution). LittletonGristMill.com

  • Buckwheat Pancake Mix. Grain mix: organic buckwheat flour, sifted wheat flour. When prepared according to package directions (including a five-minute standing time), the batter was of a near-perfect consistency. A very good rise and fine browning. The finished pancakes had a little texture from grain and a spot-on buckwheat flavor that was neither too assertive nor too faint. No gumminess. While pancakes are just sweet enough without syrup, they’re even better with it. Hands down, the best buckwheat pancake mix I tried. A favorite.

  • Multi-Grain Pancake Mix. Grain mix: organic multi-grain flour (wheat, spelt, rye, barley, oat, millet, corn, flax seeds). Label indicates that batter is “Better if left sit for at least 20 minutes.” When prepared according to package directions (including 20 minute standing time), the batter was of a very good consistency. The batter spreads more than most on the griddle. An excellent rise, fine browning. The finished pancakes have lots of texture from the grains/seeds and are somewhat gummy, with a slightly sweet, nicely “grainy” flavor. Very good! When chilled overnight in the fridge, the batter required a little thinning, but the finished pancakes showed no diminishment of quality.
  • Oat Pancake Mix. Grain mix: organic whole oat flour, whole wheat flour. I used egg in the batter (as opposed to yogurt). When prepared according to package directions (including five-minute standing time), the batter was somewhat too thin; an additional 10 minutes of standing time improved the consistency. The batter spreads more on griddle than most. A good rise, with good browning. These pancakes proved impossible to flip; they simply broke apart (I used a nonstick griddle and a nonstick, broad-bladed, metal pancake turner, as I did for all pancakes tested). I was so baffled by this that I threw out the first set of pancakes I had made and tried a second set; but these, too, proved nearly impossible to flip. The finished pancakes, which were in pieces, had a delightfully “oatmealy” texture and were a bit gummy; there was a lovely flavor of oats with a slightly sweet taste. Very good! When the batter had stood for about 40 minutes, it was very thick. I tried one last set of pancakes on my griddle. These proved much easier to flip.
  • Whole Wheat Pancake Mix. Grain mix: organic whole wheat flour, sifted wheat flour. When prepared according to package directions (including a five-minute standing time), the batter was of a fine consistency. The batter spreads more than most on griddle. An excellent rise, good browning. The finished pancakes had almost a cornmeal texture from the whole wheat flour, a great “wheaty” taste and a slightly sweet flavor. Delicious! A favorite.
