Pancake Batter Mix Reviews:

 

Shawnee Mills Whole Wheat Pancake-Waffle Mix

Grain mix: whole wheat flour, enriched bleached flour, enriched degerminated yellow corn meal, malted barley flour. When prepared according to package directions, the batter was too thin. There was less rise than some. The finished pancakes were salty and had a flavor for which I didn’t care. The sodium level was quite high (780 mg in three 5-inch pancakes). ShawneeMilling.com

Shiloh Farms Organic Essential Eating Spouted Whole Grain Pancake & Waffle Mix

Grain mix: sprouted spelt flour. This brand requires more ingredients than most to be added to the mix (eggs, maple syrup, yogurt, butter, water and vanilla). When prepared according to package directions, the batter is initially quite thin but thickens almost immediately (if it stands for any length of time, it becomes too thick, but it was ideal when I used it). An excellent rise and good browning. The finished pancakes have a little texture from the grain and are hearty but not too strongly flavored. They are almost sweet enough without syrup, but better with it. A favorite. ShilohFarms.com

Southaven Farm Baking Mixes

These mixes can make cookies, muffins, pancakes, quickbreads, even sweet bruschetta.

  • Multigrain Pancakes. Grain mix: stone ground whole wheat flour, steel cut oats, whole brown rice flour, whole barley flour, wheat bran. When prepared according to directions, the batter was of a good consistency. With the optional baking powder added, the pancakes had an excellent rise. The finished pancakes had an excellent grain presence, with a lot of texture (especially from the steel cut oats) and were slightly sweet; they were also somewhat gummy inside. A favorite.

  • Oat Bran (Wheat Free) Pancakes. Grain mix: whole oat flour, oat bran. The mix and batter had an appealing spice aroma. When prepared according to directions, batter was of a good consistency. When prepared with optional baking powder, pancakes had very good rise. The finished pancakes were a little sweet with a gentle note of spice. They had some texture from the oat bran but were quite gummy.
  • Whole Wheat Pancakes. Grain mix: stone ground whole wheat flour, wheat bran. The mix and batter had a light spice aroma. When prepared according to package instructions, the batter was of a good consistency. While I preferred adding the optional baking powder for a slightly fluffier texture, the pancakes had a good rise with or without it. The finished pancakes had a slight spice note, usually overridden by maple syrup. They were hearty-tasting; these ain’t no buttermilk hotcakes! The texture is still somewhat dense, even with the optional baking powder. A favorite.
