Lisa Herlinger was working as a restaurant cook when she was inspired to experiment with ice cream sandwiches made from all-natural, all-Northwest ingredients, including locally grown mint, honey and lavender, and locally-roasted coffee with beans from Farm Friendly Direct program, which ensures sustainability and supports the coffee growers. The milk and cream ice cream base comes from a local, hormone-free, single herd dairy.

Her first two flavors, Lemon Cookies With Honey Lavender Ice Cream and Cinnamon Chocolate Chip Cookies With Espresso Ice Cream, proved popular at a Portland farmers’ market, and she dedicated herself to creating a sustainable company, perhaps the next Ben & Jerry’s. The company is a nearly 100% waste-free, 100% carbon-free business. The cookies, originally baked by Lisa, are now made by an organic-oriented bakery in Seattle; the ice cream and the sandwiches are handmade by the company’s small staff.   Ruby Jewel Ice Cream Sandwich Flavors

Cinnamon Chocolate Chunk Cookie With Peanut Butter Ice Cream.

The original two flavors have expanded into a small line, with seasonal specialties (like Snickerdoodle Cookies With Berry Ice Cream in the summer and Gingerbread Cookies With Pumpkin Ice Cream in the fall). The cookies are excellent. We had the following; the combinations and flavors change regularly:

“The Chub” Chocolate Chocolate Chip Cookie With Vanilla Bean Ice Cream. First in alphabetical order, but least interesting to us, because the vanilla ice cream didn’t dazzle like some of the other flavors. Cinnamon Chocolate Chunk Cookie With Espresso Ice Cream. One of the originals, an inspired combination. Dark Chocolate Cookie With Mint Ice Cream. Another delicious cookie combo. We wish there were more mint in the ice cream, but our supply disappeared quickly. There’s always a divergence of opinion on style. Some people like a subtle touch of flavor, others like a stronger hand. Put Ruby Jewel in the former school, and us in the latter. Double Chocolate Cookie With Peanut Butter Ice Cream. Those who love PB and chocolate will be very happy here.

Our favorite, the Lemon Cookie With Strawberry Ice Cream sandwich, and Dark Chocolate Cookie With Mint Ice Cream.

Lemon Cookie With Honey Lavender Ice Cream. Great cookie; as with the mint, we’d like a stronger infusion of lavender.

Lemon Cookie With Strawberry Ice Cream. What luscious strawberry ice cream! This is the strongest combination of cookie and ice cream flavors; it’s our favorite.

The ice cream sandwiches are a treat for any occasion, from house parties (dinner parties, birthdays, baby showers, engagements), to office events, to reunions and other special events. They’re fun, they’re memorable and they’ll easily be the most popular dessert or refreshment served. Few people can resist an ice cream sandwich, and Ruby Jewel Treats are more irresistible than almost any others.
