Cooking Suggestions

We went for the suggested pairing of turkey and beer. But don't be afraid to get creative with some of these other options:

  • Other Types Of Poultry
    Any bird up to 24 pounds with a large enough cavity to fit over the cylinder can be “cannoned.” The chicken is one option that is prepared regularly in most households. Or, you can go with something more sophisticated: duck, goose or pheasant, perhaps.
  • Cooking Liquids
    Instead of beer, try wine or sake (note: with alcoholic liquids, use one with a low alcohol-content—no hard liquor!), fruit juice (go for unsweetened 100% juice to avoid an overly-sweet bird) or broth. Camp Chef even suggests soda—root beer, Dr. Pepper or cola can result in spiced, lightly-sweetened meat, if this is your cup of tea (or slice of meat, as it were).
  • Added Fruit
    Choose fruits that match your chosen liquid and drop a few pieces into the cannon shaft. Think orange or lemon chicken, or perhaps opt for red wine with fruit. Cherries, cranberries and other seasonal fruits will add richness to the flavor. Think of dried fruits in addition to fresh fruits.
