People looking for that magic, low, low-calorie nibble can thank the mother-daughter team of Theresa and Stephanie Santoso, founders of Cupoladua Oven. The Pennsylvania bakery uses all-natural ingredients to make healthy snacks that are low in calories and fat. Two of their products, Cupola Cookies and Cupola Clouds cheese bites, have an audience among people who like to watch what they eat. Gluten-free, they also appeal to the growing market of people with wheat and gluten allergies. The snacks are airy yet crunchy and deliver real flavor for as few as 4 calories for the cheese-flavored “clouds,” or 11 for the cupola-shaped “cookies.”

CupolaA cupola is a dome, historically used by architects on significant buildings such as cathedrals and state buildings, as well as more intimate buildings like garden gazebos. As you can see from the photos, the cookies are shaped like little domes, or cupolas—hence the name of the product.

The products have their fans as well as those who say “Thanks, but no thanks.” Fans love that they can have a cookie substitute or cheese snack that has no refined sugar, no added fats or oils and no artificial preservatives; a snack that supplies crunch and flavor for so few calories. Others will pass on Cupola Cookies and Cupola Clouds, saying that they are dry and dusty and catch in the throat if they’re not consumed with a beverage.

Both perspectives are true. You need to enjoy the cookies and clouds with a beverage, which is how they were designed. When you do, you have a snack that hardly registers on the calorie counter, even if you eat the whole box.
