Recipe: Grilled Watermelon

While the Grill Is Hot, Make This Watermelon Side Dish

Grilled Watermelon Recipe

Grilled fruit can be served as a side dish to grilled fish or meats, or as a dessert. The variations below are slightly different: The side dish gets chili sauce and cilantro, the dessert is made without the chili sauce and uses mint instead of cilantro.

Ingredients For Side Dish

  • 1 tablespoon lime zest
  • 1/4 cup fresh lime juice (two medium-large limes)
  • 1/4 cup honey, divided
  • 2 teaspoons garlic chili sauce
  • Pinch salt
  • 1 medium-size watermelon
  • 1 tablespoon fresh chopped cilantro (you can substitute basil)

Ingredients For Dessert

  • 1 tablespoon lime zest
  • 1/4 cup fresh lime juice (two medium-large limes)
  • 1/4 cup honey, divided
  • 2 teaspoons water
  • Pinches of salt and cayenne pepper
  • 1 medium-size watermelon
  • 1 tablespoon fresh chopped mint (you can substitute basil)

Preparation

  1. Preheat grill to high. In bowl, whisk together the lime zest and juice, 3 tablespoons of the honey, garlic chili sauce and salt.

  2. Cut watermelon into 1-inch thick wedges. Lightly drizzle each side with remaining honey and place on grill.

  3. Grill until just browned, about 2 minutes per side. Place watermelon slices on a plate and drizzle with lime dressing. Garnish with cilantro.

Makes 8 to 10 servings.

Per Serving: 120 calories, 2g protein, 0g total fat, 31g carbohydrate, 1g fiber, 0mg cholesterol, 45 mg sodium.
