Cake Mixes That Prove How Good Gluten-Free Can Be (Kosher, Too!)

 

CAPSULE REPORT: We’re not a special diets publication, but we do review “the best of the best.” 1-2-3 Gluten Free cake mixes belong firmly in this category. While they’re a godsend to people with gluten allergies, they’re so good that all friends and family will happily dig in. The company also makes gluten-free bread mix (biscuits, corn bread, rolls) and a gluten-free pancake mix; the products are certified kosher by Chicago Rabbinical Council. Overview

Eureka! Another great company is making magnificent mixes for the gluten-allergic. And the mixes are so good that everyone in the house will be grabbing for them.

Like a  number of gluten-free ventures (see Glow Cookies, another NIBBLE favorite), 1-2-3 is a business of a Cleveland mother-daughter team. Diagnosed with celiac disease 10 years ago, the adult daughter made do with gluten-free products available in the marketplace—not such great stuff. However, when two nieces and a nephew were diagnosed with celiac disease, she wanted them to enjoy not only delicious baked goods, but gluten-free versions of what their friends were eating, from brownies to pigs-in-a-blanket.

When you taste  how good these mixes are, there’s no surprise that omnivores and celiacs alike were equally enthusiastic. With encouragement from her mother and other family members, 1-2-3 Gluten Free was born. The name indicates how quick and easy it is to turn these mixes into treats that everyone will enjoy.

The products are manufactured in a dedicated gluten-free facility that is also nut-free allergen-free and kosher. All ingredients are listed on the website.

Gluten-Free Cake Mixes

Are you dying to sink your teeth into a scrumptious, moist piece of cake? You’ve got it!

  • Delightfully Gratifying Bundt Pound Cake Mix. This mix makes a 12-cup bundt, two 9" round layers for a birthday cake or two loaf pans from this mix. It has a hint of lemon; you can add the zest of a lemon to the mix for a lemon pound cake, or toss in chocolate chips, nuts, dried fruit or anything in your food plan.
  • Devil’s Food Chocolate Cake Mix. Here’s your wonderful chocolate  birthday cake or cupcakes galore (each package makes 24 cupcakes, or two layers of cake).
  • Peri's Perfect Chocolate Bundt Pound Cake Mix. Prefer your cake chocolate? Choose this one, as flexible as the yellow cake, to create a variety of tempting forms.

  • Yummy Yellow Cake Mix. This flexible mix comes without sweetener. You add your own, be it sugar, agave, honey or other. It’s a boon to people who want a lower-glycemic sweetener than sugar. You can make a layer cake or 24 cupcakes.
