Cabo Almeja Tequila Cocktail

Almeja is Spanish for “clam.”

Ingredients

  • 1 ounce reposado tequila
  • 1 ounce blanco tequila
  • 1 ounce Clamato juice
(We far prefer to mix our own tomato juice with clam juice and avoid all the HFCS in Clamato and similar commercial juices)
  • Splash of hot sauce (optional)
  • Lime wheel for garnish

Preparation

Cabo Almeja Cocktail
  1. Combine ingredients in a shaker and shake.
  2. Serve over ice in a salt-rimmed rocks glass.
(We suggest a flavored salt like Morton’s, or a savory glass rimmer like Urban Accent or Stirrings. Or mix your own using kosher salt and herbs. If you want it spicy, add fresh-ground pepper to the mix—and don’t add the hot sauce to the drink.)
  3. Garnish with a lime wheel.

Cabo Jalapeño

Garnish this one with a jalapeño chile—just remind your guests not to eat it!

Ingredients

  • 2 ounces reposado tequila
  • 1 ounce dry vermouth
  • 1 small whole jalapeño chile for
garnish (look for red rather than
    green jalapeños)

Preparation

  1. Add ingredients to an ice-filled rocks glass.
  2. Stir and garnish with a jalapeño chile.
  3. Optional: For extra spiciness, slit open the pepper and scrape some seeds into the glass before garnishing.
