Bison is sweeter and more flavorful than beef—and tender, too! It surprises most people when they taste it for the first time. It is prepared much the same as beef and comes in most kosher cuts. Photo courtesy of stock.xchng.
Smoked fish has a long shelf life, works in any meal situation except dessert, and is delicious. Keep some on hand for unexpected guests and emergencies (like when a planned course falls apart). You can serve it with eggs, on sandwiches, in salads, chowders, to spruce up dinner plates, on hors d’oeuvres. You can keep unopened Nova Scotia salmon in the refrigerator for months, and smoked and cured salmon, trout, and halibut can stay in the pantry for up to 5 years!
