Latin Food Recipe Tests

I tried four recipes from Daisy’s book and was not disappointed with any of them.


Arroz Con Pollo

Ah, chicken and rice. What could be simpler? This dish starts out great by browning the chicken in achiote oil, which is made from a red seed commonly used in Latin kitchens.

Then you add a sofrito, a sauce made from cilantro, garlic, onions, peppers and tomatoes (it’s a popular addition to soups and stews).

To all of those layers of flavor, you add the rice. The incredible aroma that traveled through my kitchen while cooking this was almost as good as the dish itself. See the full recipe.

Mexican Chicken Lime Soup

I really love soup for lunch, dinner or whenever. This is a light, yet satisfying soup that incorporates two of my favorite flavors: lime and chipotle. It’s a very simple chicken soup to make. Try using your own homemade chicken broth, or buy a really good brand in your supermarket for optimum flavor. Chopped tomatoes, scallions, corn and the aforementioned lime and chipotle en adobo make it so flavorful and yet, you never feel full or guilty. It’s actually a healthy meal, and I love that.

Spicy Shredded Pork Tacos

The filling for these tacos is called pork tinga (which means shredded pork or pulled pork), made from pork shoulder, the juice from grapefruit and lemons, Mexican chorizo sausage, onions, tomatoes, and a slew of spices like cumin and cinnamon. I think I just found my favorite taco filling. You can also use this filling for other things like empanadas or add it to simple rice and make something really special. 

Sweet Peppers Stuffed With Rice and Cheese

Stuffed peppers are nothing new. They’re easy to make, but often, they don’t have a lot of flavor. Rest assured, with Daisy’s recipe, these peppers have great flavor. The secret is to char and peel the red peppers for extra sweetness and flavor. It really does make a difference.

The stuffing includes zucchini, onion, cremini mushrooms and, of course, long-grain rice. And, it’s topped with a smoky Gouda cheese which adds just the right note of tanginess and creaminess to the dish.

You could serve this as a side dish with a meat or poultry meal, but believe me, it can stand on its own as a main dish. Here’s the full recipe.
