Recipe: Cardamom–Scented Tropical Fruit & Marshmallow Skewers With Apricot Sauce

Cardamom–Scented Tropical Fruit & Marshmallow Skewers With Apricot Sauce

Serve these as a light dessert or a snack. You can buy artisan marshmallows in flavors like banana, mango and piña colada to complement the tropical fruit flavors. Serves 12.

Ingredients

  • No-stick cooking spray
  • 12 large marshmallows (see our introduction to artisan marshmallows)
  • 36 pieces refrigerated tropical mixed fruit, drained
  • 12 bamboo skewers
  • 1 teaspoon cardamom, divided
  • 8 tablespoons apricot jam for dipping (warmed, if desired)

Preparation

  1. Spray grill rack with no-stick cooking spray.
  2. Preheat gas or charcoal grill to medium heat.
  3. Place one marshmallow and three pieces of fruit on each skewer. Spray skewers with no-stick cooking spray. Sprinkle cardamom evenly over fruit and marshmallows. Grill skewers on rack for 1-1/2 to 2 minutes, turning frequently, until marshmallows are lightly toasted.
  4. Place 3 skewers on each serving plate with a portion of apricot jam for dipping.
