The Pollens & Blends

The pollens and blends work best as finishing spices, something to apply to food just before serving.  We love them on roasted fish and grilled chicken; sunny-side-up eggs and popcorn; roasted potatoes and pasta. Fennel pollen meets cinnamon and nutmeg in this unique dessert spice, which is at once spicy (ginger, ground cloves) and sweet (star anise, sour plum powder, vanilla powder). Fold it into whipped cream, sprinkle it over vanilla ice cream, use it to top warm fruit pies and cobblers. Add it to cookie and muffin recipes, stir it into your morning yogurt, or sprinkle it over French toast. It also happens to be delicious with sweet potato fries or winter squash.

Ingredients: Fennel pollen, dried ground orange peel, lemongrass powder, cayenne pepper, sour plum powder, star anise, cinnamon, nutmeg, cardamom, ginger, vanilla powder, ground clove, coriander.

Hog Heaven

The sweetness of ground pecans complements that of the fennel pollen, helping this gorgeous, deep golden-red mixture bring out all the goodness of whatever poultry or pork it touches. A subtle amount of lemon zest in the mixture coaxes out other flavors without ever overwhelming them.

Ingredients: Fennel pollen, crushed toasted pecans, dried chervil flakes, fleur de sel, ground cumin, ground annatto, lemon peel.
