Espresso is one of the Dark Roast group of coffee beans—roasted until they are slightly dark to charred, black and shiny from the oil within the bean that has risen to the surface. This group has a pronounced bitterness that is sought by those who love dark roasts. But bitterness means lower acid: The darker the roast, the less acidity in the coffee beverage. Many people think that espresso is the darkest roast there is, but this is a misconception. According to the National Coffee Association, the dark roasts are, in this order of roastedness: High, Continental, New Orleans, European, Espresso, Viennese, Italian and French. However, the names are often used interchangeably, which can be very confusing to the consumer.
