Fennel Pollen

There’s a fennel pollen to bring magic to everything you cook. At front, Hog Heaven, for poultry, pork and veal, followed by Pollen Asian, for barbecuing, roasting, baking, steaming and stir-frying. All photography by Daniela Cuevas | THE NIBBLE.

WHAT IT IS: A spice that is actually pollen from the flower of the fennel plant—the same fennel that also has edible stalks and produces fennel seed.
WHY IT’S DIFFERENT: Pollen Ranch, a division of the world’s largest collector of pollens, makes nine seasoned pollens in addition to natural, that are blended to pair with specific foods (beef, chicken, desserts, vegetables) and cuisines (Asian, Cajun/Creole). There’s also yummy dill pollen.
WHY WE LOVE IT: The aroma and flavor of fennel pollen and dill pollen are something special! Like saffron or any other wonderful spice, they make a dish memorable. Buy some for yourself and your favorite cooks.
WHERE TO BUY IT: FennelPollen.com.

The Pollens & Blends

The pollens and blends work best as finishing spices, something to apply to food just before serving.  We love them on roasted fish and grilled chicken; sunny-side-up eggs and popcorn; roasted potatoes and pasta. The simpler, the better—they’re even great on buttered bread. Wherever you can, sprinkle on the sweet, fennel-y goodness.

Here’s a rundown on the terrific products from Pollen Ranch:

Are You Game?

Perfect for beef and lamb, this golden-beige powder is studded with whole mustard seeds. It has an earthy, almost mushroomy smell and a sandy texture, courtesy of ground hazelnuts. Its sweet nuttiness holds up nicely against big meaty foods, and blends perfectly with rich fattiness.

Ingredients: Fennel pollen, hazelnut powder, dried thyme leaves, coarsely cracked five peppercorn blend, date sugar, fleur de sel, mustard seeds.

Fennel Pollen - Game

Are you game to sprinkle and rub seasoned fennel pollen on beef and lamb? You sure should be!

Fennel Pollen - Dessert

Fennel pollen and cupcakes—or bread pudding or
your favorite dessert—will expand your vista.

Divine Desserts

Fennel pollen meets cinnamon and nutmeg in this unique dessert spice, which is at once spicy (ginger, ground cloves) and sweet (star anise, sour plum powder, vanilla powder). Fold it into whipped cream, sprinkle it over vanilla ice cream, use it to top warm fruit pies and cobblers. Add it to cookie and muffin recipes, stir it into your morning yogurt, or sprinkle it over French toast. It also happens to be delicious with sweet potato fries or winter squash.

Ingredients: Fennel pollen, dried ground orange peel, lemongrass powder, cayenne pepper, sour plum powder, star anise, cinnamon, nutmeg, cardamom, ginger, vanilla powder, ground clove, coriander.

Hog Heaven

The sweetness of ground pecans complements that of the fennel pollen, helping this gorgeous, deep golden-red mixture bring out all the goodness of whatever poultry or pork it touches. A subtle amount of lemon zest in the mixture coaxes out other flavors without ever overwhelming them.

Ingredients: Fennel pollen, crushed toasted pecans, dried chervil flakes, fleur de sel, ground cumin, ground annatto, lemon peel.
