Kraft Macaroni And Cheese—Organic & Velveeta Cheese Varieties

Kraft makes organic varieties of their macaroni and cheese, and also includes some varieties made with Velveeta cheese.

Organic Macaroni & Cheese Dinner (Cheddar)

  • Serving size: 2.5 ounces/70 grams/makes about 1 cup
  • Servings per container: about 2.5
  • You add: unsalted butter, 1% milk
  • Yield when prepared: about 2 cups
  • Per serving: 310 calories (80 calories from fat). 9 grams total fat, 5 grams saturated fat, 20 to 25 mg cholesterol, 640 mg sodium, 10 to 11 grams protein, 2 grams fiber, 15% calcium
  • Tasting notes: Inexact amounts of cholesterol and protein were taken from the box label. Sauce powder didn’t dissolve as readily as most, leaving some significant lumps that were difficult to break up. Sauce has more cheese flavor than most but is too thin.

Organic Macaroni & Cheese Dinner (White Cheddar)

  • Serving size: 2.5 ounces/70 grams/makes about 1 cup
  • Servings per box: about 2.5
  • You add: unsalted butter, lowfat milk
  • Yield when prepared: about 2-1/2 cups
  • Per serving: 320 calories (80 calories from fat). 9 grams total fat, 5 grams saturated fat, less than 25 mg cholesterol, 640 mg sodium, 2 grams fiber, 10 to 11 grams protein, 15% calcium
  • Tasting notes: Inexact cholesterol and protein figures taken from box label. Pleasant, but sauce is too thin. Even after a 3-minute standing time (not specified in instructions), sauce had almost no viscosity. Some cheese flavor.

Velveeta Rotini & Cheese (Whole Grain)

  • Serving size: 3.3 ounces/94 grams/about 1/3 box/makes about 1 cup
  • Servings per container: about 3
  • You add: nothing
  • Yield when prepared: about 2-1/3 cups
  • Per serving: 300 calories (100 calories from fat). 11 grams total fat, 3.5 grams saturated fat, 20 mg cholesterol, 860 mg sodium, 2 grams fiber, 11 grams protein, 15% calcium
  • Tasting notes: Pasta is 50% whole grain. The cooked pasta looks like it’s made from white flour but has a stronger, “wheatier” taste. Minimal cheese flavor.

Velveeta Shells & Cheese (Made with 2% Milk Cheese)

  • Serving size: 4 ounces/112 grams/makes about 1 cup
  • Servings per container: about 3
  • You add: nothing
  • Yield when prepared: about 3 cups
  • Per serving: 330 calories (40 calories from fat) 4.5 grams total fat, 2 grams saturated fat, 15 mg cholesterol, 990 mg sodium, 2 grams fiber, 14 grams protein, 15% calcium
  • Tasting notes: Despite the very high sodium level, this does not taste appreciably saltier than other varieties. Almost no distinguishable cheese flavor, but on the other hand I wouldn’t be able to tell you this was made with a reduced-fat-milk cheese.

Velveeta Shells & Cheese (Original)

  • Serving size: 4 ounces/112 grams/about 1/3 box/makes about 1 cup
  • Servings per container: about 3
  • You add: nothing
  • Yield when prepared: about 2-1/3 cups
  • Per serving: 360 calories (110 calories from fat). 12 grams total fat, 4 grams saturated fat, 20 mg cholesterol, 940 mg sodium, 2 grams fiber, 13 grams protein, 20% calcium
  • Tasting notes: Sauce has a somewhat metallic aftertaste. Very mild cheese flavor.
