Made in two flavors, Honey Graham was more of a cracker and could be served with double crème and triple crème cheeses, as wheatmeal biscuits are. Cinnamon Graham had a sprinkling of sugar on top, sweetening it up for the cookie plate. Both were an interesting contrast for people who wanted a quality graham cracker but were cowed by the powerhouse Tiny Trapeze cookie. Both would crumble easily into a crust. The ingredients were unsalted butter, whole wheat pastry flour, graham flour, unbleached flour, milk, light brown sugar, honey, vanilla, baking powder, cinnamon, baking soda and salt. Let’s hope that we see them back soon.
