Tiny Trapeze Graham Crackers

In mid-2006, the Tiny Trapeze brand, one of our favorites, was acquired by Whole Foods Markets. This put an end to online sales, so we have to get the products at Whole Foods retail locations. They’re worth tracking down. Charmingly retro, they look and taste like something you might have bought at the general store in the early part of the last century.

You’ll get an all-natural product† and a mouthful of thick, dense, crunchy graham goodness. This is one substantial cookie! It won’t damage your dental work, but just try to “crumble it” into a crust—you’ll be whacking it with a rolling pin for a while. On the other hand, you can dip it in milk to your heart’s content, and it won’t fall apart.

 

†The ingredients are unbleached unbromated flour, evaporated cane juice, unbleached unbromated whole wheat graham flour, unsalted butter, organic honey, cane molasses, baking powder, pure vanilla extract, kosher salt, baking soda and ground cinnamon.

It is such a pleasure to inhale the complex vanilla, graham and molasses, to taste the complex layering of flavors on the tongue. Even the crimped edges harken back to another time, when everything tasted better. Much more sybaritic than anything Reverend Graham envisioned, it was our favorite cookie find of last year.
