Fennel Pollen

There’s a fennel pollen to bring magic to everything you cook. At front, Hog Heaven, for poultry, pork and veal, followed by Pollen Asian, for barbecuing, roasting, baking, steaming and stir-frying. Photography by Daniela Cuevas | THE NIBBLE.

WHAT IT IS: A spice that is actually pollen from the flower of the fennel plant—the same fennel that also has edible stalks and produces fennel seed.
WHY IT’S DIFFERENT: Pollen Ranch, a division of the world’s largest collector of pollens, makes nine seasoned pollens in addition to natural, that are blended to pair with specific foods (beef, chicken, desserts, vegetables) and cuisines (Asian, Cajun/Creole). There’s also yummy dill pollen.
WHY WE LOVE IT: The aroma and flavor of fennel pollen and dill pollen are something special! Like saffron or any other wonderful spice, they make a dish memorable. Buy some for yourself and your favorite cooks.

Organic Dill Pollen

This is not just some substitute for dried dill leaves. Rather, it’s a subtler, more nuanced version of the familiar dill, milder than the fresh herb but equally suited for many of its uses. We like it mixed into sauces and sprinkled over eggs, fish and chicken dishes.

Ingredients: Organic dill pollen.

How To Use The Pollens

While the pollens can be used as pre-cooking rubs or mixed into dressings and sauces, we’ve found that they are best used as finishing spices, something to sprinkle on food right before serving. Here are some cooking tips:

  • Fennel pollen works best on simple dishes; anything too potent or acidic can easily mask its delicate flavors.
  • Although the fennel pollen blends have been carefully crafted to match specific foods, they can be as versatile as you want them to be. A favorite spice blend can be used anywhere—your imagination is the only limit.

Dill Pollen

Dill pollen has the heavenly scent and flavor of dill in a more delicate form.

  • Note that the fennel pollen blends contain salt, so additional salting may not be necessary.
  • The plain fennel and dill pollens are unsalted, which makes them great for people on sodium-restricted diets.
