Dulces Del Rocío

The marshmallow makers at Split Bean Coffee have been very busy: They’ve made green marshmallows in five flavors and varying colors of green. Choose from Coconut, Irish Cream, Lemon Lime, Mint and Sour Green Apple. We wish we could say that the Irish Cream is a slam dunk, but it is the most subtle of the flavors. Our favorites of this group are the Coconut, Mint (also great to melt in hot chocolate) and Sour Apple.

Other flavors include Banana, Chocolate-Covered and Rose Petal; flavors change seasonally. The marshmallows are two inches long by one inch wide, and can be easily snipped with scissors to add to sundaes, fruit kebabs, hot beverages and other purposes.

Laura doesn’t color her marshmallows, but she uses real limes so her white Key Lime marshmallows are flecked with Key lime zest. Bite into one and you feel like you are sucking Key lime juice from a marshmallow—pretty amazing, and a bit puckery, too. Given one’s expectation that a marshmallow will be sweet, these are our first “tart” marshmallows. Very sophisticated, you could pop one into a Margarita or other cocktail as a garnish.

Of normal size (one by one-and-one-quarter inches) and an elegant sponginess (as opposed to the sponginess of a commercial marshmallow), you can serve them in a green bowl for holiday flair. Laura makes more than 15 flavors, from Amaretto, Cranberry and Lavender Lemon to Mocha, Whiskey and, of course, Vanilla. All the other marshmallows we ordered came in cellophane bags, but Laura has her gift concept down nicely. Hers are attractively gift-boxed, in single flavors or in three-flavor gift packs, and gift wrap is available.
