Introduction

After years of juggling a real estate career and a family, Bo Bartlett (a.k.a. Daphne) did what other artisan food producers have done: She followed her passion for fine food and earned a culinary degree. A pastry externship at New York City’s famed restaurant Chanterelle developed her interest in sweets, and she founded The Daphne Baking Company to make it easy for busy hosts and hostesses to serve top-quality, all natural desserts.

Working in her home kitchen in Kent, Connecticut, Bo baked dozens of her first product, the Chocolate Tart, until she got it right: the perfect, from-the-freezer product. Friends and family across the country received batch after batch for feedback, until the the tarts* were deemed ready to hit the shelves. Lemon Tart and Macadamia Nut Tart followed soon after, and the thaw-and-serve tart line has now expanded to six flavors plus a ready-to-fill tart shell—and a commercial production facility, of course. The line is currently available at retailers in the Northeast, and by overnight delivery to tart lovers nationwide.

Passionfruit Tart
Those with a passion for fine pastry can always have a ready supply with Daphne tarts in the freezer. Shown above, Passionfruit Tarts, served with club soda and fresh mint. Muscat is an excellent choice for a dessert wine.

*Technically, “tart” refers to a full-size pastry that serves several people. The individual tart is called a tartlet. The bite-size tarts are miniature tarts. Daphne’s products are tartlets.
