Creating Golden Star Sparkling Tea

The sparkling tea is made from three simple ingredients: organic white jasmine tea, water and organic evaporated cane juice (the juice from the sugar cane stalks before it is crystallized into sugar).

  • Mountain Water. The water is sourced from California’s Sierra Mountains. It is carbon-filtered for purity, and then used to brew the tea.
  • Organic Jasmine Silver Needle Tea. Rare Silver Needle Tea from the mountains of the Fujian Province in China, the most valued and costly white tea, is used. It has been infused with jasmine flowers to give the white tea—the subtlest tasting of the four varieties of tea*—a complexity of flavor.
  • Organic Evaporated Cane Juice. Organic sugar isn’t processed like table sugar, so it contributes nutrients as well as the earthy caramel-molasses tones. There’s a more subtle sweetness and a balance to the acidity of the tea. Golden Star has 16g of sugar per 8 ounces. It’s moderately sweet and can be paired with fine food, like a demi-sec Champagne, a Gewürtztraminer or a Riesling.

What’s required to make Golden Star Sparkling Tea? Three simple ingredients—white jasmine tea, brown natural sugar and water—and a lot of wine-making and brewing know-how.

During the fermentation process, the tea develops a complexity of aroma and taste and a flavor balance similar to Champagne. Although there is a minute amount of residual alcohol (0.5% ABV), the beverage is non-alcoholic according to the guidelines of the U.S. Bureau of Alcohol, Tobacco and Firearms.
