Saving Bad Bubbly

If you open a bottle of champagne and it’s too dry, too flat, or otherwise not to your liking, there’s no need to toss it. Add framboise—raspberry liqueur—and make Kir Royale. Pour an inch of the liqueur into a flute or other wine glass, then add the champagne. White wine with framboise makes a regular Kir, so use this trick to turn so-so white wine into festive party drinks. If you don’t have framboise, you can use any fruit liqueur, although framboise and champagne are especially magical together.
